I made granola in the oven for years before I stumbled on a version of the recipe below. Making granola in the instapot is so easy. You’ll wonder why you never thought of doing it this way before.
If you’ve ever made granola before, then you know how annoying it can be to babysit the granola for an hour or more, constantly opening the oven to check on it. Sometimes, even with all the babysitting, I ended up tossing 10% of it because it burned around the edges of the pan.

Ingredients for Instapot granola
3 cups oatmeal (uncooked)
1/2 cup coconut (shredded or flaked)
1 cup pecans (chopped, walnuts or peanuts)
1/4 cup honey
1/4 cup butter (coconut oil or olive oil)
1 1/2 teaspoons cinnamon
2/3 cup raisins
Directions for Making Instapot Granola
Combine all ingredients except raisins in the instapot and mix well.
Set to the saute setting and adjust to low. Stir mixture constantly until lightly browned 12-15 minutes.
Spread mixture on a sheet pan and top with raisins. Cool thoroughly.
Store in tightly covered container.
