How to Make Pineapple Fried Rice

Pineapple fried rice is a quick and easy weeknight meal. You can use leftover rice from a previous days meal and just about any ingredients or odds and ends left over in your fridge.  

For this recipe, I used chicken, but you could easily substitute shrimp or pork. 

Pineapple fried rice ingredients:

2 Tablespoons vegetable oil

8 oz cooked chicken, diced

1 teaspoon minced garlic

1 teaspoon diced chili- I used red bell pepper in the video but feel free to use something with heat

2 cups cooked Jasmine rice

1/2 cup fresh pineapple, diced

2 Tablespoons fish sauce

1/2 teaspoon sugar

1/4 cup green onion, sliced

1/4 cup cashew nuts (optional)

Pineapple fried rice directions:

Heat the oil in a large skillet and add the garlic and chilis. Stir fry for about 30 seconds or until the garlic is golden brown, being careful not to burn it. 

Add the chicken , rice and pineapple and stir fry until everything is heated through.  Add the fish sauce and sugar and mix well until it is evenly distributed.  

Serve the fried rice in a pineapple bowl and garnish with green onions and cashews.
