2 1/2 cups self rising flour
2 egg whites
2 egg yolks
2 cups coconut milk
1/4 cup vegetable oil
1 teaspoon coconut extract
1 1/2 cups shredded coconut
Preheat your waffle maker.
Put the flour into a medium bowl.
Beat the egg whites until stiff and reserve to fold in last.
Mix the egg yolks until light, add the milk, vegetable oil and coconut extract. Mix well.
Gradually add egg yolk-milk mixture to flour. Stir with as few strokes as possible. Blend the shredded coconut into the batter. Carefully fold in stiffly beaten egg whites.
Ladle batter onto preheated waffle baker. Bake 3 to 4 minutes or until steaming stops and the waffle is golden brown.
Let the waffle maker heat up again before pouring batter for next waffle.
