1 3/4 cups sifted flour
1 tablespoon sugar
1/4 teaspoon salt
1/2 cup butter
4-6 Tablespoons ice water
In a medium bowl, whisk the flour sugar and salt together. Using the large holes on a grater, grate the butter into the flour mixture.
Add the cold water a tablespoon at a time until the dough comes together. Mix lightly with a fork after each addition until dough can be gathered easily into a ball. Divide the dough into halves. Shape each into a ball. (Part or all of the dough may be wrapped in plastic and stored in refrigerator until ready to use.)
This recipe makes enough pastry for about twelve 4-in. tarts, two 9-in. shells or one 2-crust pie
