In todays video, I am going to show you how to make a graham cracker cake. This is a very interesting cake because it has no flour, like most cake recipes.
The batter for this graham cracker cake is very thick and gets its bulk from graham crackers. This recipe produces a very sweet cake with the addition of the coconut.
If you don't have a silicone cake pan, you can use a 8x8 inch square cake pan.
Graham Cracker Cake
2 cups graham cracker crumbs
2 teaspoons baking powder
1 cup shredded coconut
1/2 cup butter
1 teaspoon vanilla extract
1 cup sugar
Place graham cracker crumbs, baking powder and coconut into a bowl and mix until combined.
Cream butter, sugar and vanilla until light and fluffy. Add the eggs one at a time, to the butter and sugar mixture. Stir in the graham cracker mixture.
Pour the batter into the pan. Spread the batter in the pan making sure the batter gets to the edges.
Bake at 350° F for 35 minutes or until cake tests done.
Remove cake from pan. Slice and serve with whipped cream, if desired.
