Sous Vide Sweet Potatoes

There are so many sweet potato recipes during the holidays that use extra sugar and things like marshmallows to make already sweet potatoes extra sweet. This recipe takes sweet potatoes in a more savory direction, while still embracing thier natural sweetness.

Even though I used an immersion circulator for this recipe, you can cook your sweet potatoes in a variety of ways. Steam them, roast them in thier skins or microwave them. As long as the sweet potatoes are soft enough to mash, you can add the remaining ingredients to the cooked potatoes with similar results. 

Using the pre-portioned flash frozen basil and garlic from Dorot helps to cut down on prep time. You also don't have to worry about any lingering garlic smell on your hands.

1 pound sweet potatoes, peeled and diced 1/2" pieces

1 teaspoon salt

1/4 teaspoon black pepper

3 Tablespoons butter

3 cubes Dorot basil

1 cube Dorot garlic


Place diced sweet potatoes, salt, pepper, butter, basil and garlic in a ziploc bag. Seal it and press as much air out as possible.

Place the bag in a water bath heated to 185 F for 2 hours.  After the potatoes have cooked, empty the contents of the bag into a large bowl and mash with a fork or potato masher. Season with additional salt and pepper if needed.
