Homemade banana waffles with DIY syrup
Makes 6 waffles
For the waffles:
1 1/2 cups sifted cake flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 Tablespoon sugar
3/4 cup milk
1/4 cup melted butter
1 diced banana, plus 1more for slicing on top
For the syrup:
Combine 1 cup light brown sugar and 1/2 cup water. Heat to boiling and stir until sugar melts. Turn off heat then add 1/2 teaspoon maple flavoring and 1 tablespoon butter. Serve hot.
***I made a few changes to the original recipe. I used 1 1/2 cups of self rising flour, so that eliminated the need for baking powder and salt. I also used soy milk instead of dairy milk since that is what I had on hand.
Preheat waffle maker to whatever setting you like. I set mine to 3 for light brown waffles.
Whisk together flour, baking powder, salt and sugar into a medium mixing bowl.
Add the eggs to the milk and beat until well combined. Add the milk & egg mixture to the flour. Add the melted butter. Mix well.
Stir carefully and with as few strokes as possible. Fold in the bananas. Ladle batter onto preheated waffle maker. Bake 3 to 4 minutes or until steaming stops.
Let your waffle maker heat up again before pouring batter for next waffle.
